SCONE + BISCUIT + PANCAKE = WELSH CAKE
My mother used to take me to a café in our village that served tea, Welsh Cakes, and other sweet bread. They filled every teapot with boiling water straight out of their giant "copper" kettle. As a child, I told my mum: “one day, I am going to open a bakery and call it Copper Kettle Bakery.” We always dreamed we would do it together but living 3,000 miles away from each other made it simply impossible to do.
My mum passed away in June of 2013 and shortly thereafter I was laid off. I then found myself craving the taste of Welsh Cakes and began griddling them every morning for my sons, Miles, and Noah. Then I began griddling them for neighbors and friends. As requests grew, I realized I had found my calling. In the fall of 2013, I made it official by opening Copper Kettle Bakery and I have never looked back.
What is a Welsh Cake Anyway? Welsh Cakes are a traditional breakfast food and tea-time snack from Wales. They combine the very best elements of a scone and a biscuit, but they're cooked on a griddle like a pancake. They are handmade in small batches to preserve the integrity of the cake and they are simply delicious.
How should I eat my Welsh Cakes? Welsh Cakes taste great all by themselves. You also may enjoy them with butter, jam, or honey. Try them in the evenings with wine and cheese. They are especially tasty warmed in a microwave for a few seconds.
How long do Welsh Cakes keep? Best eaten within 7-10 days under normal conditions or freeze your Welsh Cakes for a few months in an airtight container.
Welsh Cake Mixes. If you want your kitchen to have an aroma of the holidays all year round then our easy-to-make Welsh Cake Mixes are perfect for you. They have a 15-month shelf life.
